Carol has been repeatedly asked by our visitors for the recipe for some of the meals she has served up.  Here are a few to be going on with.

Somerset Pork In Cider - 4 servings

4 oz Mushrooms - pealed & sliced
2 cooking apples - peeled,cored & sliced
1 onion or leek - peeled & sliced
Ground salt & pepper
2 oz breadcrumbs
4 Pork chops
half pint dry cider
4 oz cheddar cheese

For sauce (flour & fat mix - roux) with chicken oxo and half teaspoon mixed herbs - gradually add cider and then 2 bay leaves until thick.
Butter 3 pint shallow dish, place mushrooms, apples & onions to the base of dish & season to taste. Place chops on top and cover with sauce. Mix breadcrumbs with cheese & sprinkle over chops. Bake in oven at 200c for one & quarter - one & half hours until chops are cooked.

Chicken 'Do Da'

4 pieces of chicken
3 rashers of bacon - cut into pieces
4ozs sliced mushrooms
1 leek or onion
half teaspoon mixed herbs
1 oxo cube (chicken)
2 bay leaves
three quarters pint milk

Cook chicken in olive oil to make them golden brown, place in a warmed casserole dish. Cook leak/onion until soft, add bacon and cook. Once cooked add to chicken and keep warm.
Roux some flour and marg and make sauce with milk then add mixed herbs, chicken oxo and bay leaves until sauce thickens. Discard bay leaves. Pour sauce over chicken, add sliced mushrooms and bake in oven at 180 deg for 1 hour.

Lemon Lush Cake

4ozs Butter/Marg
6ozs Castor sugar
2 large eggs
Grated rind from 1 lemon
6ozs self raising flour (or 4 white and 2 wholemeal)
4 tablespoons milk
half teaspoon baking powder

Cream the butter then add sugar and beat well. Add eggs one at a time witha little flour. Add rind and milk, then fold in flour. Pour mixture into loaf tin, bake at 180c for 45mins to an hour.

Syrup for top of cake
2ozs icing sugar
2 tablespoons of lemon

Heat together without boiling, then pour over cake while still warm.

Banana & Raisin Cake

4ozs S/R flour
4ozs Wholemeal flour
half level teaspoon baking powder
quarter level teaspoon salt
4ozs butter
3ozs demerara sugar
6ozs raisins
1 lb bananas peeled & mashed
2 eggs beaten

Pre-heat moderate oven 180 deg c (350 f or gas mark 4)
Cook on centre shelf
Grease a 2 pint loaf tin and line with grease proof paper. Sift flour, baking powder and salt into a bowl and then rub in butter until the mixture resembles breadcrumbs. Mix in sugar, raisins, bananas and eggs. Beat lightly until well mixed. Spoon into tin. Bake for 1 -1 & qtr hours until just firm to touch. Turn out of tin, remove paper and cool on wire rack.
